Vegetable Tortilla Burger

Frozen kale, thawed and cooked, along with sweet red pepper and onions make up this hearty vegetable burger in a tortilla.

Tortillas

Ingredients

1 box (10 ounces) frozen kale
1 cup (10 ounces) sweet red pepper strips
1/2 cup (10 ounces) sliced red onion
1 large (10 ounces) tortilla
1-1/2 ounce (10 ounces) grated 2-percent Monterey Jack cheese

Directions

Spray a nonstick skillet with cooking spray and place over medium heat.

Add frozen kale (thawed and cooked according to package directions), sweet red pepper strips and sliced red onion. Saute, stirring often, for three minutes.

Season with salt and pepper. Spoon over a large tortilla and sprinkle with grated Monterey Jack cheese.

Fold sides of tortilla to form a pocket.
