Slow Cooked Butternut Squash

Done right butternut squash can be very delicious and very nutritious. This slow cooked version gives you all its wonderful benefits.
Directions
Cut peeled and seeded squash into chunks.
Add three cored, peeled and sliced apples, one-tablespoon lemon juice, one-teaspoon cinnamon, one-tablespoon brown sugar and 1/2-cup apple juice.
Toss all ingredients into crock pot or slow cooker. Cook for about three hours on medium setting or until squash is fork-tender.
Quick Tip for Butternut Squash: A growing number of food stores sell butternut squash peeled, seeded, cut and ready to go - into the oven, into a stir-fry, or into a soup or rissoto, that is - bags of diced butternut squash. Every half cup serving has 5 grams of fiber and payloads of vitamins A and C.
