Crostini (Italian for "little crusts") make great soup or salad accompaniments and can be made with day-old French or Italian bread.

Cut the bread into 1/4-inch thick slices, brush one side with olive oil.

Broil about 30 seconds on each side or until crisp and golden brown.

The olive oil can be seasoned with herbs, garlic or other flavorings.

Another approach to crostini toppings include using sections of cherry tomatoes and a combination of herbs and one or more grated cheeses. After cutting the cherry tomatoes in two, place the sections on the crostini, sprinkle with herbs of your choice and then top with a light dusting of the grated cheese. When allowed to melt slightly, the cheese helps to bond the flavor of the tomatoes, bread, and the herbs into a wonderful and unified taste.
