Mexican Pizza

A quick and easy way to make a mexican tasting pizza that qualifies as a complete vegetarian recipe, too.

Ingredients

10 ounce thin pizza crust (store bought)
1 can (16 oz) vegetarian refried beans
1 cup (4 oz) pre-packaged, reduced fat Mexican blend cheese

Suggested toppings:
Shredded lettuce, chopped tomatoes, taco sauce, cilantro...

Directions

Heat oven to 425-degrees.

Place the store bought thin pizza crust on a baking sheet.

Spread with vegetarian refried beans; sprinkle with pre-packaged reduced-fat Mexican blend cheese.

Bake eight to ten minutes or until crust is crisp and cheese melts.

Top with shredded lettuce, chopped tomatoes, mild taco sauce and chopped cilantro (if desired).

Yield: 1 pizza
