Leftover turkey from Thanksgiving or just from your last turkey dinner? Try these tasty turkey reubens.
Ingredients
Turkey slices
Reduced fat Swiss cheese
Cabbage
Reduced fat Thousand Island Dressing
Directions
Layer turkey slices, reduced-fat Swiss cheese, leftover cabbage and a dollop of reduced-fat Thousand Island dressing on rye bread.
Keeping it light and healthy: Grill in a non-stick skillet using vegetable oil spray on the bread instead of butter.
Broil 2 or 3 minutes or until cheese melts and tomatoes are hot.
Suggestions: Corn bread from a mix is excellent (and quick) with this as a side dish. A refreshing, cool sorbet makes a great dessert.
Bonus: Turkey Burgers
Mix 12 ounces ground turkey with 1/2 packet onion soup mix and form into patties. Grill or pan-fry and serve the burgers in a toasted bun. Top them with lettuce, tomatoes, low-fat mayonnaise and mustard. Serve with O-Brian potatoes (frozen).
