Leftover Pork Fajitas

Use about one pound of leftover pork to make these delicious and quick to prepare pork fajitas.
Ingredients
1/2 onion, sliced
1/2 green pepper, sliced
1 pound leftover pork
4 tortillas, (7 or 8-inch) fat free and warmed
Your favorite salsa
Directions
Heat large non-stick skillet coated with vegetable oil spray on medium-high.
Add sliced onion and sliced green pepper and cook three minutes or until vegetables are soft.
Thinly slice and cut into strips leftover pork. Add to vegetables and cook one minute.
Divide mixture and place on the four fat-free warmed flour tortillas; top with salsa. Roll and serve.
Save the Salt: Drop the salt shaker and try garlic, onion, sage, pepper or oregano on your pork for seasoning.
Notable Note
To heat fajitas up in your oven, take a stack of a dozen or so tortillas and wrap them in a damp dishtowel, then wrap it all in aluminum foil. Place in the preheated oven at 300 degrees and heat them up for a few minutes. Don't use the top and bottom tortilla right away as they could be slightly damp.
