Leftover Meatloaf Sandwiches

A great way to use up leftover meatloaf and turn it into next days lunch or even dinner if you wish.
Directions
Slice up leftover meat loaf in thick slices and place them on a crusty roll.
Top with lettuce, tomato slices, onion slices and a little tomato sauce.
Warm or serve cold - delicious either way! Makes a great lunch or even a nice, casual dinner.
Meat loaf tips
Use soft bread crumbs in place of dry for a moister meatloaf, or substitute grated potato or carrots for a portion of the meat, which will also eliminate some of the calories. Baking the meatloaf on a rack will keep it out of the fatty drippings. For more flavor and a juicier meatloaf, add about 1/4 cup of tomato juice, wine, or broth for each pound of meat.
