Italian Bean and Ham Soup

This is wonderful healthy and satisfying soup after a hard day's labor or for just plain comfort, packed with healthful vegetables and ham.

Bean Soup

Ingredients

1 package (40 oz) stew vegetables (potatoes, carrots, onions)
4 cans (14-1/2 oz. each) fat free chicken broth
2 cups water
2 tablespoons olive oil
1 package (10 oz) baby spinach leaves
2 cans (15 to 19 oz) rinsed and drained cannellini beans
8 ounces diced deli ham

Directions

Microwave one package stew vegetables) five minutes on high power. Drain.

Meanwhile, bring four cans (14-1/2 ounces each) fat-free chicken broth and the water to a boil. Add cooked vegetables and continue to cook six minutes.

Add olive oil and baby spinach leaves. Cook five minutes.

Add rinsed and drained cannellini beans and diced deli ham. Cook two to four minutes or until heated through.

Serving suggestion: Packaged green salad and crusty rolls and juicy cantaloupe for dessert.

In Tuscany, cannellini beans are often eaten dried instead of cooked. In other parts of Italy, cannellini beans are a popular accompaniment to tuna and pasta dishes containing poultry. In the United States, vegetarians often utilize the hearty beans as a fish or chicken substitute. They can be found throughout America and Britain in minestrone soups and various bean salads.
