Simple Hollandaise Sauce

A classic hollandaise sauce is a rich egg yolk based sauce that is flavored with lemon or vinegar. Hollandaise sauce is typically served with vegetables fish or eggs. This recipe uses light (Reduced fat) mayonnaise with plain non fat yogurt to give you the richness and creaminess without all the added fat!

Hollandaise and Asparagus

Ingredients

1/2 cup light mayonnaise
1/2 cup plain nonfat yogurt
1 teaspoon yellow mustard
1 teaspoon lemon juice

Directions

Mix all ingredients in saucepan.

Cook on low heat five minutes or until heated through, stirring constantly.

Serve over hot steamed fresh Asparagus, sugar snap peas or broccoli. Jazz things up a bit by garnishing vegetables with chopped fresh parsley or finely chopped red peppers.
