Warm Fruity Rice Pudding

A nice dessert on a chilly night, this Warm Fruity Rice Pudding is easy to make using canned fruit cocktail and pudding and pie filling.

Snack Mix

2-cups milk
1 can (14-ounce) fruit cocktail
1 package (6-serving size) vanilla flavor cooked pudding and pie filling
1-teaspoon ground ginger
1-cup instant rice

Directions

Drain the juice from the can of fruit cocktail.

Mix all of the above, including the juice from the fruit cocktail (leaving fruit aside for now) ingredients in saucepan.

Bring to boil on medium heat, stirring constantly until mixture thickens.

Remove from heat, add drained fruit and let stand 15 minutes before serving.

Note: You can use skim, 1 percent or 2 percent milk in this recipe to reduce fat and calories. You could even use sugar free pudding and pie filling if desired.
