Fruit Salad

Pie cherries and other canned fruits make this fruit salad a snap to prepare but no less healthy than any other.
Ingredients
1 large can of pie cherries
2 cans of pineapple chunks or tidbits
2 cans of mandarin oranges
1 can of fat free sweetened condensed milk
1 container (12 oz) fat free Cool Whip
Directions
Drain the juices from pineapple and mandarin oranges.
Place all ingredients together in a big bowl and stir carefully but thoroughly.
Refrigerate until ready to serve (can be served immediately if desired).
Variation I: Nutty Fruit and Cheese Salad
Combine one-diced peach, 1-cup blueberries, one small diced apple, 2-ounces low fat Swiss cheese cubes and 1/2-ounce walnut halves, chopped.
Variation II: Fresh Fruit Salad
Ingredients:
6 cups assorted fresh fruit of choice
Juice from 1 lime
3 tablespoons fruit and vegetable juice
2 teaspoons finel chopped mint leaves
Combine fruit in large bowl. Add lime juice, fruit and vegetable juice, and mint; toss gently to coat. Refrigerate until ready to serve. Makes 6 servings.
