Chickpeas and Red Bell Peppers

Ingredients

1 cup chickpeas, rinsed and drained
1 cup chopped celery
2 carrots, chopped
1/2 cup chopped roasted red bell pepper
2 tablespoons chopped parsley
1 tablespoon lemon juice
1 tablespoon olive oil
1/8 teaspoon salt

Directions

Place all the ingredients in a serving bowl, and toss to mix.

Variation

Combine chopped fresh red bell pepper, carrots, cucumbers and scallions with lemon juice and salt.

Recipe makes 4 servings.
