Chili Burritos

Delicious and satisfying, these chili burritos are packed with protein and light enough in fat and calories to enjoy guilt free.

Turkey Breast and Tortillas

Ingredients

1 teaspoon vegetable oil
1/2 pound ground turkey breast
8 (6-inch) 98 percent fat free flour tortillas
1 can (16 oz) vegetarian refried beans
1 cup reduced fat shredded Cheddar cheese
1 can (4-4-1/2 oz) mild chopped green chilies

Directions

Preheat oven to 350-degrees. Preheat vegetable oil and cook ground turkey-breast over medium heat until no longer pink; drain.

Meanwhile, spread tortillas with vegetarian refried beans. Divide turkey and 1/2-cup (of one-cup total) reduced fat shredded cheddar cheese and spoon over beans. Fold ends, sides, and roll; place seam side down in a 13-by-9-inch baking dish coated with vegetable oil spray.

Sprinkle with remaining 1/2-cup cheese and can of mild chopped green chilies. Bake uncovered for 20 minutes.

Yield: 8 servings
