Better Bite Scones

Light and fluffy scones made healthy with oat flour, raw sugar, fruit and soy milk.

Scones

Ingredients

Mix together:
2 cups oat flour
1/4 cup plus 3 tablespoons raw sugar
1 teaspoon baking powder
1/2 teaspoon salt
4 tablespoons vegetable shortening
1 mashed banana
1/2 cup soy milk
1-1/2 teaspoons pure vanilla extract

Directions

Roll out to 1-inch thickness; cut with a biscuit cutter. Sprinkle lightly with raw sugar and bake at 350 degrees for 30 minutes, turning pan halfway through cooking time.

For moist scones with a nutrition-boost, add blueberries (about 1/2 to 3/4 cup).

Notable Note

Notable Note Scones can be frozen for up to three months. Reheat them at 300 degrees for 10 to 15 minutes. Probe the inside of the scone to make sure that it is warm.
