Beany Sloppy Joes

Make the healthiest sloppy joes ever by making them filling and nutritious with lots of fiber filled beans - and NO meat.

Ingredients

1 (15 oz) can black eyed peas (rinsed and drained)
1 (15 oz) can kidney beans (rinsed and drained)
1-1/2 cup store bought marinara sauce
1/2 cup frozen cut green beans
1/2 cup chopped green pepper
1 tablespoon Worcestershire sauce
2 teaspoons red wine vinegar
1-1/2 teaspoons chili powder
Whole wheat hamburger buns

Directions

In large skillet, combine black-eyed peas, kidney beans, store-bought marinara sauce, frozen cut green beans and chopped green bell pepper, Worcestershire sauce, red-wine vinegar and chili powder; mix well.

Bring to boil on medium high heat. Reduce heat to low, partially cover and simmer 12 minutes or until peppers are tender.

Spoon onto toasted whole-wheat hamburger buns.

Serving Suggestions: Accompany the sandwiches with frozen hash browns and a mixed green salad.

Variation: Sloppy Jacques

In a large non-stick skillet, cook one-pound lean ground round for five or six minutes or until no longer pink; drain. Stir in 2-tablespoons flour; mix well. Stir in one can (10-1/2 ounces) condensed French onion soup. Cook and stir over medium heat until bubbly. Continue cooking and stirring two more minutes or until sauce thickens. Spoon onto toasted hamburger buns.
